Easy Fresh & Clean Tacos

Crock Pot Ingredients
Garlic Salt
Red Onion
Frozen Corn
Canned Southwestern Stewed (or Diced) Tomatoes
Taco Seasoning

-Put the above ingredient in a Crock Pot, add 2 cups of water and cook on low for 8 hours or high for 4. I work during the day so I like to cook this all day and it's ready by dinner!

Taco Shells
Corn tortillas (I make enough for everyone to have 3. They're so yummy!)
Vegetable Oil
Table Salt
Metal Tongs (metal is imperative!)

-Heat vegetable oil in small frying pan. Oil is ready when you slip a slice of tortilla in and it bubbles.
-Slip corn tortilla in oil for about 30 or until it's flexible enough to fold in half.
-Leave folded tortilla in oil until it begins to brown or get crisp.
-Pull out and sprinkle with desired amount of salt.

Cilantro (pull leaves off stems)
Tomatoes (diced or sliced)
Pepper Jack Cheese (or any cheese, grated)
Avocado (beat into guacamole or sliced thinly)
Sour Cream
Green Taco Sauce (from Fresh&Easy)

Put it all together and enjoy! Super clean and good for you!

    I always cook my chicken that way, but never thought of adding the corn or beans.

    Do you just put in small pieces of raw chicken or do you put in chicken breasts and then shred the chicken later once it's cooked? I really want to try this. I'm not really a crockpot expert as I've only used mine once or twice (gasp!) So help a newbie out...

  5. Love this. The hubs is gone all week. Think I'll cook this tomorrow and eat on it all week. Tacos is my comfort food. But I can use this salad, quesadillas, nachos (for the kids). Thanks!
