½ cup sugar
½ cup splenda or low calorie sweetener of choice
1/3 cup unsweetened applesauce
1 ¼ cup mashed (overripe) banana (about 3)
1 tsp vanilla
¾ cup white flour
¾ cup whole wheat flour
½ cup cocoa powder
1 tsp baking powder
½ tsp salt
2 ounces dark chocolate (1/2 a bar for me)
Combine sugar, eggs, and applesauce and blend on low speed.
Add mashed bananas and vanilla; blend well.
Mix flours, cocoa powder, baking powder, and salt in small bowl.
Gradually add dry ingredients to wet, mixing on low speed.
Chop dark chocolate by hand (well really by knife!) or in food chopper.
Fold into batter, stirring just until well blended.
Pour batter into greased bread pan.
Bake at 350 degrees for 60-65 minutes.
Cool and enjoy!
