Chicken Pear Salad

hey y'all! i'm so excited to share a family recipe with you today.
this is my husband's favorite salad. he often calls it "candy". 
originally, this recipe does not have chicken in it.
but when i want to make a meal out of it, i just pop a chicken breast or two in it.
as a side, i think it is delicious with tri-tip or homemade spaghetti.
you really can't go wrong with it, so give it a whirl! you won't be disappointed.

first we're gonna make the dressing.
i like to make the dressing first so that all the flavors can sit with each other.
one thing to point out : tarragon vinegar - you can find it in your dressing aisle.
don't miss this! it is a key ingredient and is worth the extra trip to the store.

dressing ingredients:

1/2 cup olive oil
1 TBSP tarragon vinegar
1 TBSP sugar
4 TBSP lemon juice
1-2 TBSP chopped green onion
pinch of salt
1/2 TSP pepper

whip it all together and pop it in the fridge til you're ready for show time.

this is the hardest part for me.
candying the almonds. so worth it. just not my favorite part.
i just pour a small bag (about 3/4 cup worth) of sliced almonds into my skillet.
then pour a bunch of powdered sugar on them.
over low heat, i just mix them around. i never take my eyes off them.
they burn really easily! 
as soon as the sugar turns to liquid, make sure all the almonds are coated.
take off the heat and let cool on foil.
the hardest part of this is making sure those puppies don't burn.

now it is time to put your salad together!

salad ingredients:

1 head of red leaf lettuce
1 head of butter lettuce
2-3 pears
candied almonds
1-2 chicken breasts
1 package blue cheese

when you're ready to serve, just mix that salad dressing up real good and toss it on!

i always like to serve this with some garlic bread.
